December 19th

Thus far I have used almonds quite often. So I decided to post a recipe with walnuts today and one with hazelnuts for tomorrow.

2 sticks butter (cold)

1 cup sugar

2 eggs

pinch of salt

1 cup ground walnuts

2 cups flour

Sift the flour in a bowl and make a hole in the middle. Add sugar, eggs, salt and nuts. Cut the butter in pieces and add on top of the flour mixture. Combine with your hands until mixture forms a dough. Let it rest for 1 hour in the refrigerator. Preheat the oven and line a baking sheet with parchment paper. Roll out dough. You can cut out squares or rounds with a cookie cutter or cut the dough with a knife in even squares. Top with walnut halves and sprinkle with sugar. Bake for 10 – 15 minutes or until golden brown.
